"Cornish hens always say "special meal" to me. This is a very simple recipe that allows the natural flavor of the hen to come out. This recipe is for one hen serving 2 people. If you wish just double the recipe for heartier appetites"

Step by Step Method

Step 1

Mix together the oil, oregano and the juice of one lemon

Step 2

Rub the oil mixture all over the hen halves, season with salt and pepper and let them rest in the fridge for one hour

Step 3

Cut the second lemon in quarters, place a quarter lemon under each half hen in an oven proof dish/tray

Step 4

Preheat the oven to 375f Place a piece of foil lightly over the hen halves Place hen in oven roast for 15 minutes, remove foil and continue roasting until they are golden about 40 minutes or until the juices run clear

My mother requested cornish hens for Mother's day brunch so I knew where to come for the best recipes, we cooked 6 of them on the outdoor rotisserie tied tightly with a half of the lemon inside, everyone really loved them and not a speck left only bare bones! thanks for making our Mother's day brunch a huge success!
