Step 1: Mix together the oil, oregano and the juice of one lemon
Step 2: Rub the oil mixture all over the hen halves, season with salt and pepper and let them rest in the fridge for one hour
Step 3: Cut the second lemon in quarters, place a quarter lemon under each half hen in an oven proof dish/tray
Step 4: Preheat the oven to 375f Place a piece of foil lightly over the hen halves Place hen in oven roast for 15 minutes, remove foil and continue roasting until they are golden about 40 minutes or until the juices run clear
