"My favourite part of the chicken is the thighs because they always turn out so juicy. You generally don’t need to marinate thighs to tenderize them but this marinade sure adds loads of flavour to these babies!!"

Step 1

Place the orange juice, lemon juice, onion, garlic, rum, brown sugar, vegetable oil, ginger, hot pepper flakes and ground cloves in a large re-sealable plastic bag and mix well.

Step 2

Add the chicken pieces and swish together to coat the chicken with marinade; refrigerate for 6 hours.

Step 3

Pour the contents of bag into a casserole dish, season generously with salt and pepper and place in a preheated 350 degree Fahrenheit oven and cook uncovered for 45 minutes or until cooked through.
