Ingredients

The ingredients are:
  • 2 pounds skin-on chicken thighs (bone in)
  • 1 orange, whole (juice of)
  • 1 lemon, whole (juice of)
  • 1 small yellow onion, chopped
  • 4 cloves garlic, crushed
  • 1/4 cup rum (dark)
  • 3 tablespoons brown sugar
  • 3 tablespoons oil (vegetable oil)
  • 1/2 tablespoon minced ginger (jarred)
  • 1/2 teaspoon hot pepper flakes
  • 1/4 teaspoon ground cloves
  • Salt, to taste
  • Pepper, to taste

How to Make

  • Step 1: Place the orange juice, lemon juice, onion, garlic, rum, brown sugar, vegetable oil, ginger, hot pepper flakes and ground cloves in a large re-sealable plastic bag and mix well.

  • Step 2: Add the chicken pieces and swish together to coat the chicken with marinade; refrigerate for 6 hours.

  • Step 3: Pour the contents of bag into a casserole dish, season generously with salt and pepper and place in a preheated 350 degree Fahrenheit oven and cook uncovered for 45 minutes or until cooked through.
