"My preferred way of having asparagus is roasted in the oven, just long enough to keep it crunchy but tender. I have a set time I use, but if you use thicker asparagus or like it softer, adjust the cooking time to your taste."

Step by Step Method

Step 1

Preheat oven to 400F.

Step 2

Heat olive oil, minced garlic, lemon zest, oregano, and red pepper flakes in a small pan over low heat until garlic becomes golden and oil becomes fragrant; remove from heat and allow to cool.

Step 3

Bend asparagus gently until it breaks at a natural point and discard ends.

Step 4

Toss asparagus pieces with infused olive oil and place in a single layer on a baking sheet (one with a side edge).

Step 5

Season asparagus with salt and pepper.

Step 6

Sprinkle asparagus with crumbled feta cheese.

Step 7

Roast at 400F for 12 minutes or until cooked to your liking.

Step 8

Sprinkle with chopped parsley and squeeze the lemons over the asparagus, being careful to catch the seeds.

I just made these last week and it was deelicious! I did add about 1/2 cup of grape tomatoes. I love how the popped in your mouth when you bit into them and they tasted great with the asparagus and feta cheese. The hot peppers lent a nice zip and the lemon and garlic just made it even better. What a great new recipe for us using asparagus!
