Step by Step Method

Step 1

Slice the zucchini lengthwise, using a swivel vegetable peeler and select about 40 good strips.

Step 2

Place the strips on oiled flat plates and brush with olive oil. Season with salt and pepper, then put in the refrigerator for 20 minutes.

Step 3

Meanwhile mix well the ricotta cheese, Swiss cheese, lemon juice, minced garlic, extra virgin olive oil, salt and pepper to taste, then stir in the chopped basil leaves and pine nuts.

Step 4

Place a few good teaspoonfuls of ricotta mixture on one end of a zucchini strip and roll up.

Step 5

Repeat to use up all the filling.

Step 6

Arrange the zucchini cannelloni on a plate and grind some black pepper over the top.

Step 7

Drizzle with a little olive oil and balsamic vinegar. Serve.

I tried this recipe after seeing Bergy's review & pics. I made a half recipe & used a mandolin to cut 1/8-in slices. My issue was the runny filling that made assembly messy & an esp tart flavor that I improved by adding a bit of sugar, but honey or maple syrup may have been a better choice. I used white cheddar as the 2nd cheese, whole toasted pine nuts & fresh basil. I think fresh mint would work well too & will try this again w/cream cheese to try improving the texture. I hurried at the end & forgot the pepper, olive oil & balsamic finishing touch. My Bad. Thx for sharing this creative recipe w/us.

Bergy

I could not get the right size zuke to get wide enough slices to do the roll-up so I cut 1/4"slices from the zuke, cut a hole in the center of each slice and placed a teaspoon of the mixture on each. Perfect. But I would have loved to roll them. I used Havarti jalapeno cheese. Very nice, mild but flavourful combination. Very healthy appie.
