Step by Step Method
Step 1
Soak the oats in milk for about one hour.
Step 2
Preheat the oven to 350 degrees F.
Step 3
Spray 12 regular size muffin tins with cooking spray.
Step 4
Combine the oat mixture with the applesauce, vanilla and egg whites, and mix until combined.
Step 5
In a separate bowl, whisk the dry ingredients together. Add the wet ingredients to the dry mix until just combined (do not over-mix of the muffins will be tough).
Step 6
Spoon the mixture into the muffin pan, forming a total of 12 muffins.
Step 7
Bake for 22-25 minutes, or until done.
