  • 2/3 cup unsweetened applesauce
  • 1 teaspoon vanilla (or maple extract)
  • 2 egg whites
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 6 tablespoons unsweetened baking cocoa
  • 1/2 teaspoon salt

How to Make

  • Step 1: Soak the oats in milk for about one hour.

  • Step 2: Preheat the oven to 350 degrees F.

  • Step 3: Spray 12 regular size muffin tins with cooking spray.

  • Step 4: Combine the oat mixture with the applesauce, vanilla and egg whites, and mix until combined.

  • Step 5: In a separate bowl, whisk the dry ingredients together. Add the wet ingredients to the dry mix until just combined (do not over-mix of the muffins will be tough).

  • Step 6: Spoon the mixture into the muffin pan, forming a total of 12 muffins.

  • Step 7: Bake for 22-25 minutes, or until done.
