"These cookies are dangerous to have around because you will eat them all, no kidding these are the best cookies, You can use whatever nuts you have around I like to use mixed nuts I think they are the best for flavor, the nuts must be ground up in a food processor, I usually use a heaping 1/2 cup ground but you could use 1 cup or even more, the more you use the more nut flavor. You can also add in raisins or chocolate chips"

Step 1
Preheat your oven to 350 degrees. (Oven rack positioned to middle).
Step 2
Spray a large cookie sheet with vegetable cooking spray.
Step 3
In your bowl of your electric mixer, cream butter for 30 seconds. Add in both brown sugars and white sugar; beat 1-2 minutes. Add in egg, peanut butter and vanilla; beat 2 minutes.
Step 4
In a medium bowl combine flour with baking soda and cinnamon; add to bowl and mix until well combined. Then mix in nuts and oats.
Step 5
Drop by heaping tablespoons on cookie sheet.
Step 6
Bake 9-10 minutes until golden brown around the edges (9-10 for crispier cookies, bake less time for softer chewy cookie).
Step 7
Cool on the cookie sheet then move to a cookie rack.
