Step 1

Tortillas ... Stack the tortillas on a damp paper towel, wrap them up, and microwave on medium low heat for 15-20 seconds until the tortillas are slightly warm. This is necessary so they don't break when you fold them.

Step 2

Filling ... Spread 1 tablespoon of cheese over each tortilla on 1 side. The tortilla will be folded in half, so just add the fillings to 1/2 of the tortilla. Top the herb cheese with the bacon, then the jalapenos, and 1/2 cup of the cheddar cheese. Fold in half.

Step 3

Grill ... An outdoor grill, indoor grill pan, or even a saute pan; and you can even bake these. Brush the top with olive oil and place that side down on the grill or pan; then brush the other side. Grill until you get good grill marks, or until the quesadilla is lightly golden brown. Flip and cook the other side. If using the oven, 400 degrees and bake on a sheet pan lined with parchment paper or foil - 5-7 minutes per side.

Step 4

Serve ... Use a knife or pizza cutter and slice each quesadilla into 3 wedges. You can serve with sour cream if you want, but I don't think it is necessary. A few lime wedges to squeeze is a nice flavor if you like. ENJOY!

I love poppers and these were deliciouss! They are so quick to make and they were ready in no time, which was good because I was hungry! My boyfriends woofed his down in about 2 minutes! We both loved these and have had them a few times now. Great snack or lunch!
