Step by Step Method
Step 1
Preheat grill.
Step 2
Slice off stem end of each fig and then cut a slit in the side of each fig and open the fig like a book.
Step 3
Sprinkle the mozzarella slices with nutmeg. Push a piece of cheese inside each fig and squeeze opening closed as tightly as you can.
Step 4
Lay each filled fig crosswise on a short side of a prosciutto slice and roll up. Secure with toothpick.
Step 5
Brush the filled prosciutto with olive oil and season with pepper.
Step 6
Grill, turning occasionally with tongs, moving them around to keep from burning (5 minutes). They are done with the prosciutto is crispy and cheese has started to melt.
Step 7
Remove toothpicks and place 2 figs per person on small dishes. Squeeze lemon juice on top and serve with bread wedges.
Step 8
Note: pretty on small sections of fresh fig leaves.
