Step by Step Method

Step 1

In a medium skillet over medium heat, add the onion and the garlic and cook until the onion is translucent (about 5 minutes). Stir occasionally. Remove from the heat and cool slightly.

Step 2

Preheat your oven to 400F.

Step 3

In a bowl combine the ground chicken, egg white, tomato paste, basil, chopped spinach, parsley as well as the onion and garlic mixture in a large bowl. Season with salt and pepper and mix well with clean hands.

Step 4

Form meatballs and roll into little balls (about 1 tablespoon of mixture per ball). Place the formed meatballs into a large baking pan about one inch apart.

Step 5

Combine olive oil and tomato sauce together in a small bowl and brush on top of each meatball. Bake until golden brown (about 20 minutes).
