Ingredients

The ingredients are:
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground chicken
  • 1 egg white
  • 2 tablespoons tomato paste
  • 1 (10 ounce) package frozen spinach, thawed squeezed dry minced
  • 1 tablespoon Italian seasoning
  • 3 tablespoon Italian parsley, chopped
  • 2 tablespoon fresh basil, chopped
  • Sea salt and black pepper, to taste
  • 1 tablespoon extra virgin olive oil
  • 1/2 cup tomato sauce

How to Make

  • Step 1: In a medium skillet over medium heat, add the onion and the garlic and cook until the onion is translucent (about 5 minutes). Stir occasionally. Remove from the heat and cool slightly.

  • Step 2: Preheat your oven to 400F.

  • Step 3: In a bowl combine the ground chicken, egg white, tomato paste, basil, chopped spinach, parsley as well as the onion and garlic mixture in a large bowl. Season with salt and pepper and mix well with clean hands.

  • Step 4: Form meatballs and roll into little balls (about 1 tablespoon of mixture per ball). Place the formed meatballs into a large baking pan about one inch apart.

  • Step 5: Combine olive oil and tomato sauce together in a small bowl and brush on top of each meatball. Bake until golden brown (about 20 minutes).
