Preheat oven to 425F. Place baking sheet on middle rack upside down.
While oven is preheating, combine both cheeses and the almond flour in a microwavable bowl. Microwave for 1 minute. Stir well to combine. Microwave an additional 30 seconds.
Add the egg and the seasoning. Stir well and then knead until dough-like consistency.
Place the dough on a sheet of parchment paper and top with a second sheet. Roll out the dough to a round of about 10 inches.
When the oven is at temperature, remove the baking sheet carefully with potholders. Remove the top parchment sheet and transfer the bottom sheet onto the hot baking sheet. Using a fork, punch holes into the crust like you would do for crackers.
Place the hot baking sheet back into the oven on the middle shelf. Bake until crisp and golden (about 11-15 minutes).
Remove baking sheet from oven and top crust with toppings of choice. Return to oven and bake until cheese is bubbly (about 5-10 minutes).
Optional: Allow crust to cool on a baking rack and wrap in plastic wrap. Freeze up to one month. When ready to cook, place crust on a baking sheet in a preheated 425F oven and bake for 10 minutes. Top with toppings and bake for an additional 10 minutes. The cheese should be hot and melty at that point.
