Step 1: Preheat oven to 425F. Place baking sheet on middle rack upside down.
Step 2: While oven is preheating, combine both cheeses and the almond flour in a microwavable bowl. Microwave for 1 minute. Stir well to combine. Microwave an additional 30 seconds.
Step 3: Add the egg and the seasoning. Stir well and then knead until dough-like consistency.
Step 4: Place the dough on a sheet of parchment paper and top with a second sheet. Roll out the dough to a round of about 10 inches.
Step 5: When the oven is at temperature, remove the baking sheet carefully with potholders. Remove the top parchment sheet and transfer the bottom sheet onto the hot baking sheet. Using a fork, punch holes into the crust like you would do for crackers.
Step 6: Place the hot baking sheet back into the oven on the middle shelf. Bake until crisp and golden (about 11-15 minutes).
Step 7: Remove baking sheet from oven and top crust with toppings of choice. Return to oven and bake until cheese is bubbly (about 5-10 minutes).
Step 8: Optional: Allow crust to cool on a baking rack and wrap in plastic wrap. Freeze up to one month. When ready to cook, place crust on a baking sheet in a preheated 425F oven and bake for 10 minutes. Top with toppings and bake for an additional 10 minutes. The cheese should be hot and melty at that point.
