"Adobo sauce has a very distinctive flavor and is spicey. In this recipe the tomato sauce tames it so it is still "warm" but won't take your head off. If you wish, when serving garnish with some lettuce, radish roses, avocados and sour cream. Goes well with rice"

  • Be sure to trim the fat from the pork chops before adding them to the sauce.
  • For a spicier sauce, add more ancho peppers to the blender.

  • Substitute the ancho peppers with jalapeños for a spicier flavor. The benefit of this substitution is that jalapeños are spicier than ancho peppers, so the dish will have a more intense flavor.
  • Substitute the pork loin chops with chicken for a leaner option. The benefit of this substitution is that chicken is lower in fat and calories than pork, making this dish a healthier option.

Vegetarian Option Replace the pork chops with a block of extra firm tofu, cut into cubes. Simmer for 25 minutes, stirring occasionally.

Vegan Option Replace the pork chops with a block of extra firm tofu, cut into cubes, and replace the butter with vegan margarine. Simmer for 25 minutes, stirring occasionally.

Mexican Street Corn: This dish is a delicious accompaniment to the pork chops in adobo sauce. The sweetness of the corn is a perfect contrast to the spiciness of the adobo sauce, and the lime, chili powder, and cotija cheese add a delicious flavor.

Chipotle-Lime Rice: This flavorful rice dish is the perfect accompaniment to the Mexican Street Corn and Pork Chops in Adobo Sauce. The smokiness of the chipotle peppers and the zesty lime flavor pair perfectly with the sweetness of the corn and the spiciness of the adobo sauce. The rice is also a great way to add some heartiness to the meal.

I made a few changes to the recipe by cuting the recipe down to one as I was dining alone then I marinated the chop for 4 hours with all the ingredients except the flour. I then removed the chop from the marinade and grilled it. This is divine!!!! Just the right amount of heat for me :-)
