Pork Chops In Adobo Sauce

"Adobo sauce has a very distinctive flavor and is spicey. In this recipe the tomato sauce tames it so it is still "warm" but won't take your head off. If you wish, when serving garnish with some lettuce, radish roses, avocados and sour cream. Goes well with rice"

Step 1

Using scissors cut the cleaned ancho peppers into small pieces, pour boiling water over them, soak for an hour or until the pieces are pliable

Step 2

In a blender or food processor blend together the onion, tomato sauce, vinegar, flour, oregano, cumin, garlic and steeped ancho pepper pieces. Process until you have a smooth sauce

Step 3

Pour the sauce into a skillet, put in the chops, flip them to coat both sides, cover the pan, simmer for approximately 45 minutes. Serve and I hope enjoy

No special items needed.



I made a few changes to the recipe by cuting the recipe down to one as I was dining alone then I marinated the chop for 4 hours with all the ingredients except the flour. I then removed the chop from the marinade and grilled it. This is divine!!!! Just the right amount of heat for me :-)
