Step by Step Method
Step 1
Boil, steam or microwave rice until just tender and drain and cool slightly.
Step 2
Heat an oiled, big non-stick frypan over medium to high heat and add pork and cook for about 2 to 3 minutes on each side or until almost cooked and then add plum sauce with 2 tablespoon water and cook, turning pork, until cooked.
Step 3
Meanwhile, heat the 1 tablespoon of oil in a big wok over a high eat until hot and add capsicum, corn, onions and bok choy stems and stir fry for about 2 minutes, or until almost tender and then add ginger and stir fry until fragrant and then add rice, bok choy leaves and soy sauce and stir fry until hot.
Step 4
Serve pork with any remaining plum sauce and rice mixture.
