Step by Step Method

Step 1

Preheat oven to 400°F.

Step 2

In a small bowl, combine tomato sauce, red pepper flakes and garlic; stir to mix well.

Step 3

Place both pitas on a baking sheet. Using a pastry brush or spoon, evenly divide sauce mixture between pitas, leaving a 1/4-inch border around edges. Sprinkle with spinach, then arrange mozzarella rounds over top of greens, dividing both evenly.

Step 4

Bake for 8 to 10 minutes, until greens are wilted and mozzarella is melted. Remove from oven, sprinkle with basil, dividing evenly, and serve immediately.

I couldn't make this exactly as per recipe as I could not buy any pita bread at any of the major supermarkets except for some Lebanese pita which were rather large so I used a mini wrap (I only made one) and used my own pizza sauce (cooked of some tomato paste, add some garlic and cook some more one cooled add some finely shredded basil) and I had already put on the spinach leaves whole and put on the sliced mozzarella when I realized I was supposed to shred the spinach but the end result cooked at 200C fan forced for 8 minutes was delicious and oh I topped it with shredded purple basil.
