"Pineapple vinegar is a vibrant, fruit-based vinegar made with fresh pineapple. I use the whole pineapple, but you can use scraps/cores. (If using just cores, you will need at least 6 of them.) This vinegar is great drizzled over salads and used for vinaigrette recipes that call for plain vinegar."

Step by Step Method
Step 1
Chop the peeled and cored pineapple and place in a large glass or plastic bowl.
Step 2
Drizzle the sugar and vinegar over the pineapple and cover with plastic wrap.
Step 3
Place in refrigerator for 7 days.
Step 4
Strain through a sieve and discard the pineapple.
Step 5
Store in airtight containers in a cool dark place.
Tips
- Air tight container such as a mason jar or bottle with screw lid.
