Step by Step Method
Step 1
Melt coconut oil in a skillet. Sprinkle salt and pepper all over the roast and brown on all sides.
Step 2
Drain the pineapple juice into a 2 cup measure. Put pineapple into bottom of crock pot. Add salsa into the 2 cup measure and mix well.
Step 3
Place browned roast on pineapple and the potato chunks around the roast. Cover with the salsa mixture and cook on low 8-10 hours.
Step 4
When done, drain sauce into a small pan, bring to boil and add the arrowroot (mixed with cold water). Simmer until thick.
Step 5
Slice and serve roast, with sauce on top.
