Ingredients

The ingredients are:
  • 1 tablespoon coconut oil
  • 1 (3 to 4) pound pork loin roast (boneless)
  • Salt & pepper
  • 1 potato, cut into chunks
  • 1 sweet potato, peeled and cut into chunks
  • 1 (20 ounce) can pineapple chunks, undrained
  • 1/3 cup brown sugar
  • 1 1/2 cups chunky garden salsa
  • 1/4 cup cold water
  • 1 tablespoons arrowroot or cornstarch

How to Make

  • Step 1: Melt coconut oil in a skillet. Sprinkle salt and pepper all over the roast and brown on all sides.

  • Step 2: Drain the pineapple juice into a 2 cup measure. Put pineapple into bottom of crock pot. Add salsa into the 2 cup measure and mix well.

  • Step 3: Place browned roast on pineapple and the potato chunks around the roast. Cover with the salsa mixture and cook on low 8-10 hours.

  • Step 4: When done, drain sauce into a small pan, bring to boil and add the arrowroot (mixed with cold water). Simmer until thick.

  • Step 5: Slice and serve roast, with sauce on top.
