Step by Step Method
Step 1
Preheat oven to 375°F.
Step 2
Combine bread, pine nuts, cornmeal, parsley, garlic, cayenne and salt in a food processor.
Step 3
Process into fine crumbs.
Step 4
Add egg white and pulse 2-3 times.
Step 5
Place mixture in a shallow dish.
Step 6
Combine mustard and water in a small bowl.
Step 7
Brush mustard mixture over chicken.
Step 8
Roll chicken in bread crumb mixture, pressing to coat evenly.
Step 9
Place in a large, lightly greased baking pan.
Step 10
Bake uncovered until chicken is cooked and coating is crisp and brown, about 30 minutes.
