Step 2: Combine bread, pine nuts, cornmeal, parsley, garlic, cayenne and salt in a food processor.
Step 3: Process into fine crumbs.
Step 4: Add egg white and pulse 2-3 times.
Step 5: Place mixture in a shallow dish.
Step 6: Combine mustard and water in a small bowl.
Step 7: Brush mustard mixture over chicken.
Step 8: Roll chicken in bread crumb mixture, pressing to coat evenly.
Step 9: Place in a large, lightly greased baking pan.
Step 10: Bake uncovered until chicken is cooked and coating is crisp and brown, about 30 minutes.
