Step 1

Slice the stems off from all the mushrooms (discard or save for another use). Half the mushrooms if they are large.

Step 2

Combine all ingredients (including the mushrooms) in a stainless steel pot; bring to a boil over high heat and cook for 5 minutes. Reduce heat to low and simmer another 15 Cool and refrigerate overnight.

I let these chill for three days, and boy am I glad! When they were first made I tasted them and the chili flakes overpowered everything else. After sitting a while, however, they were perfect! Nice combination of vinegar and other flavours and just a touch of heat for bite.
