Step 1: Slice the stems off from all the mushrooms (discard or save for another use). Half the mushrooms if they are large.
Step 2: Combine all ingredients (including the mushrooms) in a stainless steel pot; bring to a boil over high heat and cook for 5 minutes. Reduce heat to low and simmer another 15 Cool and refrigerate overnight.
