Ingredients

The ingredients are:
  • 1 pound mushrooms (fresh small white button mushrooms, cleaned to remove any dirt)
  • 1/2 cup dry white wine
  • 1/2 cup cider vinegar
  • 1 cup water
  • 6 black peppercorns
  • 1 large bay leaf
  • 3 to 4 garlic cloves, quartered
  • 3 to 4 tablespoon yellow onion, minced
  • 1 teaspoon salt
  • 1/2 teaspoon crushed chili flakes, optional (can use more or hot sauce to taste)

How to Make

  • Step 1: Slice the stems off from all the mushrooms (discard or save for another use). Half the mushrooms if they are large.

  • Step 2: Combine all ingredients (including the mushrooms) in a stainless steel pot; bring to a boil over high heat and cook for 5 minutes. Reduce heat to low and simmer another 15 Cool and refrigerate overnight.
