"Cooking the fish in foil gives a lovely moist result with the flavours from the additons penetrsting the fish. This recipe is from Canadian Living magazine. BBQ if you wish - medium high heat for 6-8 minutes. The oven cook time, of course, depends on the thickness of your fillet. Eleven minutes at 400f was perfect for the two pictured here"

Step by Step Method
Step 1
Tear off 8 pieces of foil large enough to enclose the fish pieces
Step 2
Double the foil so you now have 4 pieces of foil
Step 3
Divide the fish fillet into 4 servings
Step 4
Place each serving on a piece of foil
Step 5
Top each with 1/4 of the onion, wine, garlic thyme, salt and pepper.
Step 6
Bring the foil up over the fish, double fold and press the edges to seal
Step 7
Place in 400 oven for 10 - 12 minutes or until the fish flakes easily
