Penne & Chicken With Tomato Sauce

Step 1

Combine first 5 ingredients in a small bowl; rub over chicken

Step 2

Heat oil in a large nonstick skillet over medium-high heat. Add chicken; cook 4 minutes, turning once. Remove chicken from skillet to a plate; set aside.

Step 3

Reduce heat to medium. In same skillet, add garlic; sauté 30 seconds or until garlic is soft. Add tomatoes and wine, scraping pan to loosen browned bits. Bring to a boil. Reduce heat, and simmer 15 minutes. Add chicken and it's juices, and simmer 5 minutes.

Step 4

Meanwhile, cook pasta according to package directions. Drain.

Step 5

Toss pasta with sauce in a large bowl. Sprinkle with cheese and basil. Serve.

This was a tasty dish...not a recipe that wowed us...but it created a nice meal...very easy to prepare and it hit the spot...I did cut the recipe in half and it sure made plenty for at least 3...made for "Billboard" tag game...

I made this exactly as written, and the family really enjoyed this served with a salad. This made for an easy meal after work. Thanks Mikekey.

I scaled back for 2 serves though only used half the amount of fennel that was recommended for 2 serves as I felt it would overpower the dish if the full amount was used. A really quick dish to put together and was enjoyed by the DH and I, thank you Mikekey made for Pick Me tag game.

Very good! I finally got around to making this recipe today for an early dinner, I made some changes to the recipe by omitting the fennel and using garlic powder for the rub, I also used cayenne pepper, I used a 28-ounce can tomatoes, thank you for sharing this great recipe Mike! (Made for RZ Recipebook tag game)
