Step by Step Method
Step 1
Preheat oven to 375 degrees F. Grease or line muffin tins.
Step 2
In a medium bowl beat egg with milk, peanut butter, brown sugar, oil and vanilla until well blended; stir in bran cereal and let stand for about 6-7 minutes.
Step 3
Slice the bananas in half lengthwise in quarters, then cut crosswise into chunks; sir into cereal mixture.
Step 4
In a large bowl combine flour with baking powder and salt; stir in cereal mixture, stirring with a wooden spoon JUST until blended (batter should be lumpy, do not overmix!). Spoon into muffin tins filling to the top.
Step 5
Bake about 20-22 minutes or until golden brown and muffins teast done.
