The ingredients are:
  • 1 egg (large)
  • 1 1/2 cups milk
  • 1/2 cup peanut butter (crunchy)
  • 3/4 to 1 cup brown sugar (firmly packed)
  • 1/4 cup vegetable oil
  • 1 1/2 to 2 teaspoons vanilla
  • 1 cup bran cereal (100% bran cereal)
  • 2 bananas (medium bananas)
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt

How to Make

  • Step 1: Preheat oven to 375 degrees F. Grease or line muffin tins.

  • Step 2: In a medium bowl beat egg with milk, peanut butter, brown sugar, oil and vanilla until well blended; stir in bran cereal and let stand for about 6-7 minutes.

  • Step 3: Slice the bananas in half lengthwise in quarters, then cut crosswise into chunks; sir into cereal mixture.

  • Step 4: In a large bowl combine flour with baking powder and salt; stir in cereal mixture, stirring with a wooden spoon JUST until blended (batter should be lumpy, do not overmix!). Spoon into muffin tins filling to the top.

  • Step 5: Bake about 20-22 minutes or until golden brown and muffins teast done.
