Step 1

In a large bowl, toss peaches, tomatoes, corn, onion, and mozzarella with olive oil and 1/2 teaspoon each salt and pepper. Let sit 5 minutes.

Fold in arugula and basil, then transfer to platter.

Tasty salad! Used a combination of peaches and nectarines and the sweetness provides a nice balance of flavors with the arugula, basil, tomatoes, etc.. However, I did add vinegar (white balsamic) to even it out. Sorry, that I forgot to add the basil and onions for the pic, but we had it with it. Thank you, Teresa, for sharing. Made it for FYC.
