Step 1

Bring a saucepan full of water to a boil; add snap peas and cook until crisp-tender and bright green (only a minute or two); drain and rinse under cold running water; drain. Slice lengthwise.

To make the dressing: whisk together the lemon juice, oil, salt and pepper in a salad bowl. Add peas, cucumbers, feta, gives and mint; toss.
