Ingredients

The ingredients are:
  • 1/2 pound snap peas (trimmed, 2 cups)
  • 2 tablespoons lemon juice
  • 1 1/2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 kirby (600 grams) cucumbers (halved lengthwise and sliced)
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons chives, chopped
  • 3 tablespoons mint leaves, sliced

How to Make

  • Step 1: Bring a saucepan full of water to a boil; add snap peas and cook until crisp-tender and bright green (only a minute or two); drain and rinse under cold running water; drain. Slice lengthwise.

  • Step 2: To make the dressing: whisk together the lemon juice, oil, salt and pepper in a salad bowl. Add peas, cucumbers, feta, gives and mint; toss.
