Step by Step Method

Step 1

After peeling and cutting up the parsnips put them into a pot of boiling water, when the water reaches boiling again cook the parsnips for 2 minutes, drain well.

Step 2

Spray an oven proof pan with olive oil. The pan must be large enough to accomodate the parsnips in one layer.

Step 3

Lightly spray the parsnips on top with oil, drizzle the maple syrup over them.

Step 4

Bake in 425f oven for about 20 minutes or until the parsnips are golden.

I used baby parsnips for this recipe and haved them then followed the recipe as written. We really enjoyed these as a side last night. They were beautifuly caramelized from the maple syrup and so full of flavour. I also loved the ends that became crispy! A great recipe that I will making again and again.
