Step 1: After peeling and cutting up the parsnips put them into a pot of boiling water, when the water reaches boiling again cook the parsnips for 2 minutes, drain well.
Step 2: Spray an oven proof pan with olive oil. The pan must be large enough to accomodate the parsnips in one layer.
Step 3: Lightly spray the parsnips on top with oil, drizzle the maple syrup over them.
Step 4: Bake in 425f oven for about 20 minutes or until the parsnips are golden.
