"Cod is a pretty boring fish all on its own, so I try to help it out a bit with toppings. This one works well, and also is good on other fish. If you use something else, be aware you'll have to reduce the baking time. For example, if I use tilapia I typically only bake it for 10-15 minutes."

Step by Step Method

Step 1

Preheat oven to 375F; cover a baking sheet with sides with aluminum foil and coat foil with cooking spray.

Step 2

Lay fish fillets on foil; skin side down.

Step 3

Mix together remaining ingredients except lemon juice; spread evenly over fish, coating entire top of each fillet.

Step 4

Sprinkle lemon juice evenly over the fish.

Step 5

Bake at 375F for 20-25 minutes, until fish flakes easily with a fork.

I used cod loins for this very wonderful dish! I used Grana Padano for the cheese and did not measure. Also subbed the salt and pepper for lemon pepper. Squeezing the excess water out of the frozen fish kept it firm not soggy. Excellent recipe that I have saved. DH and I thoroughly enjoyed your recipe. Thank you Felix for sharing!
