Ingredients

The ingredients are:
  • 1 pound cod fish (fillets, defrosted and water squeezed out if frozen)
  • 1/2 cup Parmesan cheese (the stuff in the can actually works best)
  • 1/3 cup olive oil mayonnaise
  • 1 tablespoon onion, dried minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/8 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons lemon juice

How to Make

  • Step 1: Preheat oven to 375F; cover a baking sheet with sides with aluminum foil and coat foil with cooking spray.

  • Step 2: Lay fish fillets on foil; skin side down.

  • Step 3: Mix together remaining ingredients except lemon juice; spread evenly over fish, coating entire top of each fillet.

  • Step 4: Sprinkle lemon juice evenly over the fish.

  • Step 5: Bake at 375F for 20-25 minutes, until fish flakes easily with a fork.
