Combine ricotta, parmesan and garlic in a bowl.
Heat oil in a large pan over moderate heat and egg and tilt to cover the base.
Cook for 4 minutes or until set underneath, turn and cook for a further minute and then slide onto a large heatproof plate.
Add rocket to pan and cook and stir for 3 minutes or until it wilts and then cool slightly and using hands squeeze excess liquid from rocket and chop.
Spread omelette with ricotta mixture and top with ham, then rocket and then roll omelette to from a log and enclose filling.
Cut into slices to serve.
