Step 1: Combine ricotta, parmesan and garlic in a bowl.
Step 2: Heat oil in a large pan over moderate heat and egg and tilt to cover the base.
Step 3: Cook for 4 minutes or until set underneath, turn and cook for a further minute and then slide onto a large heatproof plate.
Step 4: Add rocket to pan and cook and stir for 3 minutes or until it wilts and then cool slightly and using hands squeeze excess liquid from rocket and chop.
Step 5: Spread omelette with ricotta mixture and top with ham, then rocket and then roll omelette to from a log and enclose filling.
Step 6: Cut into slices to serve.
