Step by Step Method
Step 1
Grease an 18cm x 28cm rectangular slice pan and line base and sides with baking paper, extending paper 4cm above pan edges.
Step 2
Sift flour and baking powder into a large bowl and return husks from sieve to bowl and then stir in oats and sugar and then add butter and stir until combined.
Step 3
Press three quarters of the mixture over base of prepared pan and spread nectarines over top.
Step 4
Combine remaining oat mixture with coconut and sprinkle over the nectarines, pressing down.
Step 5
Cook in a moderate oven (180C) for about 35 minutes, or until golden brown and then remove from oven and leave in pan until cold.
Step 6
To make icing, place sugar in a bowl and stir in enough juice until a pouring consistency.
Step 7
Lift slice out of pan and drizzle with icing and let stand until set and then cut into bars.
