Ingredients

The ingredients are:
  • 1 cup wholemeal flour
  • 1/2 teaspoon baking powder
  • 1 1/2 cups rolled oats
  • 1/2 cup brown sugar, firmly packed
  • 175 grams unsalted butter, melted
  • 3 nectarines, halved, stones removed, cut into thin wedges
  • 1/3 cup shredded coconut
  • Icing
  • 1 cup icing sugar mixture
  • 1 1/2 tablespoons lemon juice

How to Make

  • Step 1: Grease an 18cm x 28cm rectangular slice pan and line base and sides with baking paper, extending paper 4cm above pan edges.

  • Step 2: Sift flour and baking powder into a large bowl and return husks from sieve to bowl and then stir in oats and sugar and then add butter and stir until combined.

  • Step 3: Press three quarters of the mixture over base of prepared pan and spread nectarines over top.

  • Step 4: Combine remaining oat mixture with coconut and sprinkle over the nectarines, pressing down.

  • Step 5: Cook in a moderate oven (180C) for about 35 minutes, or until golden brown and then remove from oven and leave in pan until cold.

  • Step 6: To make icing, place sugar in a bowl and stir in enough juice until a pouring consistency.

  • Step 7: Lift slice out of pan and drizzle with icing and let stand until set and then cut into bars.
