Nuts For Granola!

"I like granola with my Greek Yogurt but commercially prepared ones have lots of fat and calories. This is my attempt to be a little healthier! I have also made a hot cereal using 3/4 cups boiling water to 1/2 cup oat mixture. Add oat mixture to boiling water, bring back to boil, reduce heat and simmer for about 5-7 minutes, stirring frequently until liquid is absorbed."

Step by Step Method
Step 1
Preheat oven to 300ºF.
Step 2
In a large cast-iron pan, melt the coconut oil if it's solid, otherwise just add oil to pan.
Step 3
Mix together oats and nuts, add to pan.
Step 4
In a saucepan, combine juice, sugar and spices. Bring to boil and keep to a simmer until slightly reduced.
Step 5
Pour liquid over oat mixture and stir until everything seems evenly mixed.
Step 6
Put into oven until golden. (about 20 minutes)
Step 7
Remove from oven and stir in raisins and cranberries.
Step 8
Return to oven for another 5 minutes or until mixture is dry.
Step 9
Cool completely.
Step 10
Store in airtight container or bag in refrigerator.
Step 11
Can be used hot or cold (see recipe description).
Tips
- I use a cast iron pan but it could easily be made on a rimmed baking sheet.
