Ingredients

The ingredients are:
  • 14 grams coconut oil (1 tablespoon)
  • 1 cup oats (old fashioned)
  • 1/3 cup unsweetened coconut flakes
  • 1/3 cup slivered almonds
  • 1/3 cup pecan nuts (or walnuts, broken)
  • 1/3 cup apple juice
  • 1/4 cup packed brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/4 teaspoon ginger
  • 3/4 cups dried cranberries (raisins)
  • 1/2 cup raisins (golden)

How to Make

  • Step 1: Preheat oven to 300ºF.

  • Step 2: In a large cast-iron pan, melt the coconut oil if it's solid, otherwise just add oil to pan.

  • Step 3: Mix together oats and nuts, add to pan.

  • Step 4: In a saucepan, combine juice, sugar and spices. Bring to boil and keep to a simmer until slightly reduced.

  • Step 5: Pour liquid over oat mixture and stir until everything seems evenly mixed.

  • Step 6: Put into oven until golden. (about 20 minutes)

  • Step 7: Remove from oven and stir in raisins and cranberries.

  • Step 8: Return to oven for another 5 minutes or until mixture is dry.

  • Step 9: Cool completely.

  • Step 10: Store in airtight container or bag in refrigerator.
