Step 1: Preheat oven to 300ºF.
Step 2: In a large cast-iron pan, melt the coconut oil if it's solid, otherwise just add oil to pan.
Step 3: Mix together oats and nuts, add to pan.
Step 4: In a saucepan, combine juice, sugar and spices. Bring to boil and keep to a simmer until slightly reduced.
Step 5: Pour liquid over oat mixture and stir until everything seems evenly mixed.
Step 6: Put into oven until golden. (about 20 minutes)
Step 7: Remove from oven and stir in raisins and cranberries.
Step 8: Return to oven for another 5 minutes or until mixture is dry.
Step 9: Cool completely.
Step 10: Store in airtight container or bag in refrigerator.
