"Another family favourite, at our house a must make for holidays and special occasions. At holiday time I make them with maraschino cherry centres, roll in flaked coconut,serve in the pretty foil cupcake liners."

Step by Step Method

Step 1

In a large mixing bowl measure in the oatmeal and coconut, mix to blend. Set aside.

Step 2

In a saucepan blend sugar, butter, milk and cocoa bring to a boil over medium heat, simmer until shiny bubbles about 3 - 4 minutes or so. Remove from heat, add vanilla. Quickly pour over the oatmeal/coconut. Mix until coated. Drop on a wax paper lined pan, cool until set.
