Step by Step Method

Step 1

In skillet heat 1 tablespoons of butter and oil

Step 2

Add mushrooms

Step 3

Add garlic, dont brown

Step 4

Add spinach

Step 5

Add mustard to taste

Step 6

Butter bread

Step 7

Add cheese on each slice bread

Step 8

Put on hot skillet

Step 9

Butter side down

Step 10

When spinach is wilted put on top of cheese

Step 11

Make sure bread is crunchy toasty

Step 12

Put together cut on diagonal

At the moment I cannot get Monterey Jack Cheese so used 2 slices of a sharp cheddar otherwise followed as per recipe though when making again I will use 2 button mushrooms as when I put the mushroom/spinach mis on top; of the cheese it just oozed out and into the pan and also I think I will do it in a sandwich or panini press instead of the fypan. Thank you dienia b for a great lunch sandwich, made for Only The Lonely tag game at FF&F.
