Step 1

Combine the first 4 ingredients (through rice vinegar) in a small bowl, stirring with a whisk.

Step 2

Heat a large skillet over medium-high heat. Add oil to the pan; swirl to coat. Add garlic and ginger to pan; sauce 30 seconds. Add soy sauce mixture and coleslaw; cook 1 minute, stirring frequently. Add chicken and 1/4 cup onions to the pan; cook 1 minute or until the coleslaw just begins to wilt.

Step 3

Divide chicken mixture evenly among lettuce leaves; sprinkle evenly with remaining 1/4 cup onions and cashews. Enjoy!

Wow! This was so yummy...we loved all the flavors...I did cut the recipe in half...the hubby thought the lettuce was a bit limp...so next time I might use iceberg or romaine...but the bib does hold a nice amount of the mixture...made for "For Your Consideration" tag game...
