Ingredients

The ingredients are:
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon dry sherry
  • 1 tablespoon hoisin sauce
  • 1 teaspoon rice vinegar
  • 1 tablespoon sesame oil (dark)
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh ginger, peeled and minced
  • 1 package (14 ounce) coleslaw mix (4 cups)
  • 6 ounces cooked boneless skinless chicken breast (rotisserie chicken breasts, about 1 1/2 cups)
  • 1/2 cup green onions, sliced (divided)
  • Bibb lettuce leaves (12 leaves)
  • 1/4 cup cashew nuts (chopped)

How to Make

  • Step 1: Combine the first 4 ingredients (through rice vinegar) in a small bowl, stirring with a whisk.

  • Step 2: Heat a large skillet over medium-high heat. Add oil to the pan; swirl to coat. Add garlic and ginger to pan; sauce 30 seconds. Add soy sauce mixture and coleslaw; cook 1 minute, stirring frequently. Add chicken and 1/4 cup onions to the pan; cook 1 minute or until the coleslaw just begins to wilt.

  • Step 3: Divide chicken mixture evenly among lettuce leaves; sprinkle evenly with remaining 1/4 cup onions and cashews. Enjoy!
