Step 1

Saute veggies in oil until onions are translucent.

Step 2

Put rest of ingredients all together and simmer 30 minutes until veggies are soft (can cook longer if you like mushier veggies).

Very good a a good clean out the fridge recipe. I think it is very adaptable to what is in the fridge even though I used all the veggies mentioned -- just didn't measure. Just oregano instead of basil and garlic salt instead of the Mrs Dash seasoning, Italian seasoning in place of poultry seasoning . Very good soup which we enjoyed. This makes a lot so we also were able to freeze some for lunches. Thanks for sharing!
