" Mint just goes with lamb andwe love this recipe - I hope you do too. I just cut a rack of lamb in half and freeze the second half - If you do the whole rack just double the recipe. Your exact oven time depends on the thickness of the rack. "

Step by Step Method

Step 1

Preheat your oven 375f

Step 2

Season your rack with oregano, rosemary, salt and pepper, place the rack in an open oven proof pan pop it into the pre heatd oven for 20 minutes

Step 3

Meanwhile melt the mint jelly add the garlic and parsley, pour over the lamb that has roasted for 20 minutes

Step 4

Return to the oven for a further 10 minutes or until the internal temperature reaches 160-165 for a medium, still pink rack

This is an amazing rack of lamb, love the mint, had to use mint sauce, could not find any mint jelly, regardless it worked beautifully! love the combination of garlic and mint with the rosemary and oregano, delicious! the timing was perfect for medium rare, our favourite. thanks for posting, i will be making this again.
